KOMATSUNA
Japanese Mustard Spinach
Komatsuna or Japanese mustard spinach is a leafy Asian green.. It is a variety of Brassica rapa, the plant species that also produces the turnip, mizuna, napa cabbage, and rapini. It is grown commercially in Japan and Taiwan. It is a versatile vegetable that is cooked and eaten in many ways.
The Veg
This leafy vegetable is abundant in beta carotene, vitamin C, calcium and iron. Komatsuna is said to contain 5 more times calcium than spinach.
Nutrition
Wrap in paper towel or newspaper and store in a refrigerator. If leaves start to look unhappy, soak the roots in water.
Storage
Komatsuna is a slightly bitter/mustardy Asian green, but it is not overly bitter. It can usually be used in place of mustard greens/tatsoi/bok choy etc. Great sautéed.
